If there are no updates available, none of the settings should change from the previous state. It does renegotiate IP address and DHCP settings, so these items may change from the previous state.

Restoring Factory Defaults 

It is possible to erase configuration settings on a phone and restore it to the state that is was received from the factory. Keep in mind that using the Factory option will erase all settings customized locally at the phone, such as personal speed dial entries, phone book entries, line key settings, and distinctive rings.
